Using a rigorous, hands-on, Total ImmersionSM curriculum, instructors propel students who enroll in the Classic Culinary Arts or Classic Pastry Arts evening programs into the workplace after just nine intense months of classes. Their training is intensive and in-depth. They learn not just French cooking, but instead, the building blocks of all modern Western cuisine. And, they sharpen their skills with real-time, hands-on cooking in the middle of the action at L'Ecole, The French Culinary Institute's critically-acclaimed restaurant in the heart of New York's restaurant scene.
