UC Irvine Extension Offers Summer Wine Technique Online Course

IRVINE, Calif.--(EON: Enhanced Online News)--Resulting from the success of its Winter “Wine Service Techniques for the Food and Beverage Professional” course, University of California, Irvine Extension will offer the course online for the first time this summer quarter. The course will run from June 25 through July 22 and the online format will allow individuals from across the nation to attend. This summer course is part of the Wine Management Specialized Studies Program, which is designed for individuals seeking career advancement within the wine/food business, and related retail trade industries.

“We continue to offer courses where participants will gain hands-on experience and knowledge about wine service excellence,” said Kirwan Rockefeller, Ph.D., program director of the UC Irvine Extension wine studies program. “Course instructor Christopher E. Coon will assist course participants in identifying and practicing professional standards of wine service through wine tastings, technique demonstrations and service practices.”

The online course “Wine Service Techniques for the Food and Beverage Professional” is a hands-on experiential course, designed to provide professionals with an opportunity to identify and practice professional standards of wine service. Participants will explore all aspects of wine service with an emphasis on still wine, sparkling wine service including sabering, decanting and aerating, storage and service temperatures, food and wine pairing theory and practice, stemware selection, tasting and describing wine, blind tasting theory, professional verbiage, wine list structure and inventory control.

Course instructor Coon is an Advanced Sommelier certified by the Court of Master Sommeliers. Over the past 15 years he has worked with two Wine Spectator Grand Award winning wine lists, has developed wine programs at Montage Resort & Spa, Phoenician Resort & Spa, St. Regis Resort & Spa, and Charlie Palmer/Bloomingdales, and in 2006 was awarded the prestigious John Ungar Master Sommelier Candidate Scholarship.

The Wine Management Specialized Studies Program is a multidisciplinary program taught by highly experienced industry professionals. Courses encompass grape growing and wine making, food and wine pairing, history of wines, types of wine products available and classification of major worldwide wine producing regions.
