He will oversee all of the food and beverage responsibilities for the community’s exclusive restaurant, The Crown Room.

The Crown Room’s culinary team ensures that residents’ daily dining experience is on par with top-quality restaurants, offering more than 30 menu options from which to choose, including signature entrees, daily specials, and a variety of healthy-casual offerings.

A graduate of the University of Wisconsin, Chef Borden has worked alongside some of the most prestigious chefs in the world, including Bobby Flay and Michael Mina, and participated in The Annual Masters of Food and Wine event in Carmel, CA.
Prior to joining Peninsula Del Rey, Chef Borden served as sous chef at the Sequoias, an upscale San Francisco senior living community, where he oversaw all menus, buffets, and banquets for 350 residents, supervised a 20- person kitchen staff and was named “employee of the year” in 2010. Previously, he was the sous chef at Monterey Plaza Hotel and Spa in Monterey, CA, where he lead menu development and the day-to-day kitchen operations for The Duck Club Grill and Schooner’s Bistro.
